Brand History: The culinary technique for making Spicy Chicken originated in the early Qing Dynasty and the early Republican era, and has been passed down for over 100 years to this day. Long Ge Di Spicy Chicken was founded in August 2003. After years of development, it has become a hallmark of Guiyang’s culinary culture, earning numerous accolades such as “Top Ten Famous Dishes of Guizhou—Champion Restaurant” and “One of China’s Top Ten Golden Rooster Culinary Masterpieces.”
Manufacturing process: Brother Long’s Spicy Chicken is meticulously crafted in terms of ingredient selection. The primary ingredient is authentic corn-fed chicken—raised free-range in a natural, eco-friendly environment for about 180 days and weighing around 7 jin. As for the chili peppers, we use a blend of Zunyi strip chili, Huaxi roasted eagle-beak chili, Suiyang bullet-head chili, and Dafang chicken-claw chili to make the “ci ba” chili paste. After soaking and gently boiling these four types of chili peppers for two hours and then cooling them down, we add salt, small yellow ginger, and single-bulb garlic, and pound them in a stone mortar until they reach a thick, sticky consistency. In addition, we also employ a special spice blend—a secret recipe passed down through the Long family, carefully prepared with more than ten different aromatic herbs—and a specially formulated seasoning sauce. During preparation, the freshly slaughtered chicken undergoes an acid-removal process. Only after undergoing several cooking steps—including marinating, oil-frying, braising, and slow-roasting over low heat—can the finished dish be served.
Texture and Flavor Profile: Long Da Ge’s Spicy Chicken boasts a vibrant red color and an intensely fragrant aroma. Its taste is perfectly balanced—salty, spicy, and delightfully palatable—with a tender, chewy texture that’s truly enjoyable. Each bite offers a richly layered experience: the first bite delivers a sharp, aromatic kick of chili heat straight to the palate; then, the succulent juices of the chicken burst forth between your teeth.
